Make sure to cut from nose to rind so you taste the beauty in a natural rinded clothbound cheese. A rich and buttery cheddar that offers outstanding depth of flavor, which develops as it reaches the back of the palate. Quicke’s Mature Clothbound Cheddar (P) (200g): is handcrafted using milk from Quicke’s grass-fed cows, clothbound and naturally matured, typically for 12-15 months. Sharpham Ticklemore Goat’s Cheese (200g) (V):: Sharpham Ticklemore goat’s cheese is made from pasteurised Devon goat’s milk it’s a semi-hard goat’s cheese with a beautiful stark white color, crumbly texture, and delicate subtle herbaceous hints on the palate. It is a semi-hard cheese, made with Jersey cow’s milk, it has a refreshing light tang that delicately balances the richness of the milk, with a lovely crumbly texture. Sharpham Rustic (V) (200g): is handcrafted in our Sharpham Dairy, in Totnes, Devon. Buttercup yellow with fresh milk from our Jersey cow’s herd, it is a mould-ripened cheese, firm, rich, and creamy when young, softening with mushroomy notes and a chicory finish with age. Inspired by Maurice Ash, Sharpham Brie is more of a Coulommier style cheese and has been hand-made to our own recipe at Sharpham since 1981.
